BEEF: 

 

Being from the South I am a meat eater!  I love hamburgers, steak, mexican food, casseroles, etc...  I Hope you like these recipes as much as I love to cook them.  Have fun and change up what you don't like, make your own!  Thanks for visting the "Eat Meat" section, but there are lots more for you to enjoy.  Check out all of the recipes I have to offer.  Happy Cooking!

Beef Goulash

 

Ingredients:

1-lb. ground beef       1/2 tsp. salt

1 onion, diced             1/2 tsp. pepper

2-3 Tbsp. olive oil       1/2 tsp. cayenne

1 tsp. minced garlic

1 tsp. chopped celery

1 tsp. Worchestershire sauce

1 (14oz.) can small diced tomatoes

1 (12oz.) can tomato soup

1 (12oz) pkg. elbow macaroni

grated cheddar cheese for topping



Directions:

Cook macaroni in salted water and drain. Heat oil in skillet. Add meat, onion, celery and when meat is done, add garlic. Drain and add salt, pepper, cayenne pepper, worchestershire sauce, tomatoes and soup. Stir in macaroni.  Put into sprayed 13x9 casserole dish and bake at 350 degrees for 20-25 min.  Sprinkle with cheese and after 25 min., and then put back into oven for additional 10-15 min. to melt cheese.

​Enchilada Casserole


Ingredients:
1-1lb. ground beef, cooked and drained

1 Tbsp. garlic, minced

1 Tbsp. cumin

1 onion, diced

1 can rotel diced tomatoes

1/4 tsp. cayenne

2 cans enchilada red sauce

1 cup sour cream

2 cups cheese, divided

corn tortillas



Directions:

1. Set the oven to 350 degrees. 
2. In saute pan, brown ground beef, drain...add garlic seasoning salts along with cayenne and some taco or enchilada seasoning.

3. Add diced onion to beef mixture and cook until opaque.

4. Add one can enchilada sauce and diced tomotoes to beef mixture.

5. Add 1/2 cup cheese to mixture

6. Spray a 13x9 pan and layer corn tortillas on bottom, then spoon mixture on top, then sprinkle cheese.  Continue doing this until you reach top of pan and end with adding remaining cheese. 

7. Open can of enchilada sauce, drizzle on top of cheese and put into oven for 30 minutes.  Serve with sour cream.

Cheeseburger Chowder

 

Ingredients

1/2 lb. ground beef

3/4 cup-each chopped onions, carrots, celery

1 tsp. each dried basil, parsely flakes

4 Tbsp. butter - divided

3 cups beef broth

4 cups potatoes, peeled and cubed

1/4 cup flour

8 oz. velveeta cheese, cubed

1 1/2 cup milk

3/4 tsp. salt

1/4 tsp. pepper

1/4 cup sour cream


Directions

1. In 4 qt. sauce pan, brown meat and drain, set aside. In same pan add 1 Tbsp. butter, onions, celery, carrots, basil and parsley.  Cook 10 min. stirring frequently - it may need a little water. Add broth, potatoes and meat, cook to a boil.

2. Reduce heat and cover and simmer for 12 min.  In a small pan add 3 Tbsp. butter and flour, cook over med. heat until bubbly and thick. Cook 2-5 min. Add this cooked flour to the soup mixture, stir until smoothed out.

3. Boil and cook an additional 2 minutes. Reduce heat and add velveeta cheese, milk, salt and pepper and cook until melted. Add sour cream and stir until sour cream is incorporated through. Serve with bread.

​Nacho Mommas Cheese Soup


Ingredients:
1lb. ground beef, cooked and drained

2 cloves garlic, minced

1 med. onion, diced

1 can (11oz) corn, drained

1 (14oz.) can of rotel or any diced tomatoes with chilies, undrained.

1 dash of Tobasco sauce

2 cups water

1 pkg. augratin potatoes with cheese

2 cup milk

1 cup cubed Velveeta cheese



Directions:

1. Brown ground beef, drain.  Then add onion and garlic.

2. In large pot combine Augratin potatoes, corn, tomatoes and water.  MIx well and bring to a boil.

3. Reduce heat, cover and simmer 15-20 min., until potatoes are tender.

4. Add milk, velveeta cheese and Tabasco sauce. Cook, stirring until cheese is melted and smooth.  Serve!

​Shepherd's Pie


Ingredients:
1 1/2lb. ground beef, cooked and drained

1 cup cooked, grated carrots

1 cup peas, drained

2 tsp. Worcestershire sauce

3/4 cup catsup

1 tbsp. minced onion

2 tbsp. water

salt and pepper to taste

6 small cooked and mashed potatoes

1/2 stick butter

1/2 cup sour cream



Directions:

1. Cook and drain ground beef.

2. Mix all ingredients except potatoes, butter and sour cream, spoon into casserole dish and then top with mashed potatoes, butter and sour cream.

3. Bake at 350 for 30-35 min.

​Hearty Beef & Potato Casserole


Ingredients:
4 cups frozen potato rounds or tater tots

1lb. ground beef, cooked and drained

1 (10oz) pkg. chopped broccoli, thawed

1 can (2.8 oz.) French fried onions

1 can cream of celery soup

2 cups shredded cheddar cheese

1 cup milk

1/4 tsp. garlic powder

1/8 tsp. pepper

dash of salt



Directions:

1. Place potatoes on bottom and sides of a 9x13 pan.

2. Bake uncovered at 400 degree for 10 min.

3. Brown beef in large chunks and drain.

4. Place beef, broccoli and 1/2 can of french fried onions in potato shell.

5. Mix soup, milk, 1/2 cheese and seasonings and pour over beef mixture.

6. Bake covered at 400 degrees for 30 min. Top with remaining cheese and onions, then bake uncovered for 10 minutes to brown the onions.

​Spaghetti Pie


Ingredients:
6 oz. spaghetti

2 tbsp. margarine

1/2 cup grated parmesan cheese

2 eggs, beaten

1lb. ground beef or 1/2lb beef and 1/2lb sausage (I like it with both)

1/2 cup chopped onion

1/4 cup green pepper, diced

1 (8oz.) can diced italian tomatoes

1 (6oz.) can tomato paste

1 tsp. sugar

1 tsp. oregano

1/2 tsp. garlic salt or powder

1 to 1 1/2 cup ricotta or cottage cheese

1 cup grated or sliced mozzarella cheese



Directions:

1. For crust: Cook and drain spaghetti. Add margarine, eggs and parmesan cheese to spaghetti. Form mixture into crust in 10-in buttered pie plate.

2. Sauce: Saute meat, onion and green pepper; drain off excess fat. Stir in undrained tomatoes, tomato paste, sugar, oregano and garlic salt.

3. Heat through.

4. To assemble pie, spread ricotta over crust and top with meat mixture.

5. Bake uncovered for 25 min at 350 degree oven. Sprinkle with mozzarella and bake until melted for 5 to 10 min.

Italian Pot Roast

 

Ingredients

3-5 lb. chuck roast

1 pkg. Au jus seasoning

1 pkg. dry Good Seasons Italian seasoning

12 oz. tomato juice

1 pkg. small baby carrots

4-6 potatoes, cubed

1/4 cup olive oil


Directions

1. Place roast in crock pot, rub olive oil on top of roast and season with seasonings.

2. Pour juice, carrots and potatoes on top and cook for high for 6 hours.  If it gets dry, add beef broth as the liquid.

​Taco Casserole


Ingredients:

1/2lb. ground beef, cooked and drained

1 (15oz.) can or jar tomato sauce

1 (15oz) can chili beans, undrained

1 (3oz) can french fried onions

1 cup coarsely crushed corn chips and shredded cheddar cheese

2 cup shredded lettuce

1/2 cup sour cream



Directions:

1. Cook ground beef, drain.

2. Add tomato sauce, cili beans & 1/2 of onions, mix well. Bring to a boil and reduce heat.

3. Simmer uncovered for 10 min. Stir in remaining onionsand corn chips. Remove from heat.

4. Sprinkle lettuce around outer edge of pan, followed by a ring of cheese and a dollop of sour cream in the center.

5. Serve immediately and with tortilla chips.

​Italian Meatballs


Ingredients:
1lb. sausage

3lbs. ground chuck

1/3 cup grated Romano Cheese

5 eggs

3 cups bread crumbs, more if needed

2 tsp. pepper

1 1/2 tbsp. salt

1 tsp. sweet basil

1/2 tsp. oregano

1 tsp. parsley flakes

1/2 tsp. garlic powder



Directions:

1. Mix thoroughly, add water if needed. Roll and brown in oven about 20 min. at 350 degrees. Add sauce and serve.

​Impossible Cheeseburger Pie


Ingredients:
1lb. ground beef, cooked and drained

1 onion, diced

1 tsp. salt and pepper

1 cup shredded cheddar cheese

1 1/2 cup milk

3/4 cup Bisquick

3 eggs



Directions:

1. Set the oven to 400 degrees. 
2. Mix all ingredients together and put into a 9x11 baking dish, sprayed with Pam spray or non-stick cooking spray.

3. Bake for 30 to 40 minutes.

Beef and Potato Casserole

 

Ingredients:

1-lb. stew beef, marinade if you want

1 large onion, diced

4 potatoes, sliced

parsley



Directions:

1. Butter casserole dish, cut potatoes into small chunks, cut onion and layer on top.

2. Pour meat and sauce on top of potatoes and onions. You can cover and put into microwave for 25 minutes or put into oven for 45 minutes at 350 degrees.

​Simply Chili


Ingredients:
1-1/2 lb. ground beef, cooked and drained

1lb. Jimmy Dean sausage, cooked and drained

4 cloves garlic, minced

1 (12oz) cans black beans, drained and rinsed

1 (12oz) chili beans, undrained

2 qts. canned diced tomatoes with garlic and oregano

8 oz. can tomato sauce

12 oz. jar medium salsa

1 med. onion, diced

2 pkg. McCormick's chili seasoning

pinch of salt and pepper

pinch of sugar

Seasonings: 1 tsp. lowry's season salt, garlic/pepper

12 oz. beef broth

 

Directions:

1. Brown ground beef, drain.

2. Cook onion, garlic in saute pan for 2-5 min. Do not burn garlic, put this in last.

3. In large pot, place ground beef and all other ingredients in and place on low heat, Add sauted onion mixture and cook on low for 35-45 min.

​Cabbage Rolls


Ingredients:
1 head of cabbage

1 chopped onion

1lb. ground beef

1/2 cup uncooked rice

1 can tomato soup

1 can water



Directions:

1. Chop cabbage in large pieces and place on bottom of greased baking dish.

2. Brown beef and drain, then stir in onions until opaque. Stir in rice.

3. Place meat mixture on cabbage and cover with soup and water.

4. Cover with foil and bake at 350 degrees for one hour.
