BREADS & ROLLS:

 

Tell me who doesn't like bread...well I sure do...with melted butter or honey...so good.  These recipes are full of wonderful ingredients to bring you to your knees...begging for more!

GARLIC PARMESAN PULL-APART BREAD

 

Ingredients:

2 tsps. active dry yeast

1 1/3 cup barely warm water

2 tbsp. extra virgin olive oil

2 tsp. salt

3 1/2 cups all purpose flour, or bread flour

1/4 cup butter, melted

1 tbsp. dried parsley flakes

2 cloves garlic, minced

1/4 freshly grated parmesan cheese



Directions:

1. In a large mixing bowl, stir together the yeast and water. Let sit for 5 min. until yeast is foamy. Mix in olive oil, salt and flour. If you have a mixer, attach the dough hook and knead the dough for 5-6 min. or until elastic. If you are doing by hand, knead the dough on a lightly floured surface until dough is elastic.

2. Transfer dough to a lightly oiled bowl and cover with a towel. Allow to rise for 1 1/2 to 2 hours, or until dough is doubled in size.

3. In a small bowl, combine melted butter, parsley, garlic. Set aside.

4. Punch down the dough. Tear off small pieces of dough, approximately the size of a small spoon, coat in the butter mixture and place in the bottom of a bundt pan.

5. Repeat this process until you have one layer of dough balls. Sprinkle on 1/3 of the parmesan cheese. Continue layering the dough balls and cheese until you have 3 layers. Cover the pan with a towel and allow to sit until dowh has doubled in size...20-30 min. approx.

6. Preheat oven to 350 degrees, bake for 25-30 min or until bread is golden brown. Serve with marinara or hot tomato oil.

BANANA RUM BREAD

 

Ingredients:

1/2 cup butter, 1 stick

3/4 cup brown sugar, firmly packed

2 large eggs

1 tsp. vanilla extract

3 large ripe bananas, mashed

1 cup all-purpose flour

1 cup whole wheat flour

1 tsp. baking soda

1 tsp. baking powder

1/2 tsp. salt

1/2 cup dark rum



Directions:

1. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Beat in eggs one at a time, mixing well between additions. Beat in the vanilla extract and mashed bananas until fully incorporated.

2. Mix in the flours, baking soda, baking powder and salt, then stir in rum.

3. Transfer batter to the prepared loaf pan and bake for 55 to 65 min. in a pre-heated 350 degree oven.  Cool loaf in pan for 10 minutes before taking out.

SAVORY MONKEY BREAD

 

Ingredients:

1 Loaf unsliced bread

1 cup pesto

12 oz. mozzarella cheese, thinly sliced

kosher salt

pepper



Directions:

1. Preheat oven to 350. Line a baking sheet with parchment paper.

2. Prepare the bread: Score the bread lengthwise. To do this, slice the bread as you would for toast, but don't cut all the way down.  Just score the bread basically, but at least 1 inch from bottom.

3. Use a spatula or butter knife to spread pesto in the crevices of bread.  just get in a good slathering.

4. Next, place mozzarella slices inside the crevices, wedging them in so that they don't stick out too far at the top...keep the ooey gooey inside.

5. Place bread on baking sheet and bake for approx. 15-17 min.

 

CHEDDAR & BACON LOAF

 

Ingredients:

1 (16oz.) loaf baquette or french bread

1 cup shredded sharp cheddar cheese

1/2 cup butter, softened

1/3 cup cooked bacon pieces, crispy

2 medium green onions, sliced

2 tsp. yellow mustard

1 tsp. lemon juice



Directions:

1. Preheat oven to 350.

2. Use a serrated knife to cut bread crosswise into 1-inch slices, cutting but not through the bottom crust.

3. In a small bowl, stir together cheese, butter, bacon, green onions, mustard and lemon juice. Spread mixture between slices of bread. Wrap loaf in foil.

4. Bake for 10-15 min. or until bread is heated through and cheese is melted.
