PORK:

 

Southern Flare made simple!!  I absolutely love Pork everything!  If it has bacon in it, or if I have some pulled pork, pork roast or pork tenderloin...I'm in!!  My husband is the best smoker around town and having him smoked these meats is divine.  So, look around and take some recipes home to your family!  I know mine love it!

BREAKFAST CASSEROLE

 

Ingredients:

12 oz. hash browns

10 eggs

1 cup cottage cheese

2 cup shredded cheddar cheese or swiss

2 tsp. salt and  1/4 tsp. pepper

1 onion, chopped

8 drops Tabasco

12 slices of crumbled bacon

paprika



Directions:

1. Let bag of hash browns sit out to defrost. Spread on bottom of a sprayed 9x13 pan.

2. Beat eggs. Add remaining ingredients, except bacon and paprika.

3. Pour egg mixture over potatoes, sprinkle bacon and paprika on top.

4. Cover with foil and refrigerate overnight. Bake at 350 for 45 minutes.

RICE & KIELBASA

 

Ingredients:

1 can cream of celery soup

1 1/2 cup water

1 tbsp. butter

1lb. smoked Kielbasa, cut into 1/2 in pieces

3/4 cup uncooked long grain rice

1 (10oz.) pkg. frozen peas

1 cup shredded cheese



Directions:

1. In a skillet, combine soup, water and butter; bring to a boil. Add Kielbasa and rice.

2. Reduce heat; cover and simmer about 18 to 20 minutes or until rice is almost tender. Stir in peas.

3. Cover and simmer 15 minutes or until rice is tender and peas ar heated through. Sprinkle with cheese; cover and let stand until melted.

TORTELLINI, HAM & PEAS

 

Ingredients

1/2 cup mayo

1/2 cup milk

1/2 cheddar cheese

1/2 cup monterey jack cheese

1/2 bag of frozen peas

2-4 cups chopped ham, depending on how much you want.

1 bag cheese tortellin, frozen

 

Directions

1. Cook tortellini as directed. Set aside

2. In medium saucepan combine mayo, milk and cheeses. Do not boil.

3. Add chopped ham and peas.

4. Mix in tortellini and serve.

 

Pizza Spaghetti

 

Ingredients:

1lb. spaghetti

4 cups shredded mozzarella cheese

1/4 cup milk

1 egg

1 jar spaghetti sauce

mushrooms

pepperoni

 

Directions:

1. Preheat oven to 375. Cut spaghetti into 2 inch pieces. Cook Spaghetti,then drain. Mix spaghetti, egg, milk and 2 cups cheese in bowl.

2. Put mixture into deep baking dish (9x13). Bake in oven about 15 minutes, remove from oven.

3. Spread sauce over entire top. Sprinkle remaining 2 cups cheese over sauce. Add mushrooms & pepperoni. Bake for another 30 min. Remove from oven and cut into squares.

Baked Ham Sandwich

 

Ingredients:

Loaf of Italian Sandwich - cut in half

Sliced Ham

1 (8oz.) softened cream cheese

1 stick butter, softened

1/2 cup parmesan cheese

1 tsp. paprika

1 tsp. oregano

1/2 tsp. garlic powder

tomato

mushrooms

mozzarella cheese



Directions:

1. Beat softened cream cheese and butter. Add seasonings.

2. Spread 2/3 of mixture on bread.

3. Add ham slices, sliced tomatoes, mushrooms & mozzarella cheese.

4. Take remaining butter mixture and spoon on top of sliced tomatoes.

5. Broil for a few minutes until cheese melts, then bake 5 minutes at 350.

HASH BROWN CASSEROLE

 

Ingredients

1 Pkg. Ore Ida Hash browns with peppers and onions (thawed)

1 can Cream of Chicken soup

1 (16oz) sour cream

2 cup shredded cheddar cheese

2 cup cubed ham

1 stick melted butter

2 cup crack crumbs or corn flakes

salt & pepper to taste


Directions

1. Mix hash browns, soup, sour cream, cheese, ham, 3/4 melted butter and salt/pepper.

2. Put mixture in baking dish. Mix 1/4 cup melted butter and cracker crumbs or corn flakes, then sprinkle on top.

3. Bake at 350 degree for 1 hour.

SAUSAGE STUFFED SHELLS

 

Ingredients

1 box of jumbo shells, cooked Al Dente, then drained and rinsed off, having them cool down

1lb. Jimmy dean sausage

1 onion, chopped

1 (8oz.) cream cheese, softened

1 egg

2 cups parmesan cheese

2 cups mozzarella cheese

2 jars of your fave spaghetti sauce

1/4 tsp. Italian seasoning

1 tbsp. minced garlic


Directions

1. Cook pasta according to directions, cook Al Dente, then run under cool water.  Set aside

2. Brown sausage, add seasoning, onion and garlic.  Cook until sausage is done. Drain and put sausage on paper towls to absorb the grease.

3. In a large bowl, add softened cream cheese, egg and 1 cup parmesan cheese.  Mix well.

4. Add in cooked sausage mixture into cream cheese mixture.

5. Spoon sausage and cheese mixture into shells.

6. In a 9x13 pan, put about 1/4 cup of jarred sauce on bottom, and then arrange the stuffed shells on top of sauce until all of the pan is full.

7. Put into a 375 degree oven for 35 minutes.

8. Pull the shells out, then put sauce all on top of shells and remaining cheeses.

9. Add back into oven for additional 15 minutes or until cheeses are melted.
